In the beginging, there was cake.

I love cake!  It is my favorite food and my favorite thing to make!  I really believe cake should taste as good as it looks and be made with wholesome ingredients.  That said, I am still working on my store of recipes and am always ready to try something that looks promising! 


To kick off my blogging, I'm going to begin with my first cake that started this whole cake making obsession of mine.


A little over a year ago my husband (then fiance) and I were celebrating our friend Heather's birthday at the home of another friend, Mandy.  I had whipped up a cake real quick; a red velvet from the box cake with some homemade cream cheese icing, at Heather's request and brought it over.  In never thought it was all that fantastic but apparently it made an impression.  Mandy's oldest daughter later came up to me and asked what I planned on getting her for her birthday.  Taken aback I told her it was rude to ask someone that sort of thing, and she quickly backtracked saying that she was only wondering because she would rather have me make her birthday cake AS a birthday gift.  Easy enough!  All she wanted was a colorful cake, inside and out, to go with her 80's themed party.  It was so much fun to make!  Being given free reign like that!  The end result was beautiful and simple, unfortunately I have since lost the pictures I did have of the cake due to a computer crash, but I will do my best to describe it.  It was a 10", 2-layer funfetti cake iced in white butter cream with a hot pink shell border around the top and the bottom of the sides were decorated in a pattern of tropical Mike and Ike candies.  She loved it which was enough for me, and so did her mother Mandy.  Since then Mandy has been supporting me in this endeavor by giving my name out to everyone she knows and encouraging me at every corner.  So I guess I could blame this whole blog on Mandy couldn't I? :)  Just kidding!  I love that she encouraged me to get started on this and I love doing it!
